Continue up Glen Fyne past the Fyne Ales brewery and you’ll quickly find the significant portion of our farmland, pasture and woodland that has been specially adapted and dedicated to our herd of red deer.
As part of commitment to maintaining and enhancing our local ecosystem, our herd is fed primarily on spent grain - a byproduct of the brewing process - that gives our venison meat a rich flavour and ensures it is lean and low in saturated fat.
Working with local Argyll butchers, we’ve chosen some excellent cuts and products for our early-autumn meat boxes, whether you’re looking for something a bit different or exploring this delicious healthy meat to treat yourself, you’re in for an amazing food experience.
Our Prime Venison Box contains:
- 2 packs - fillet or striploin steaks (500g)
- 2 packs - haunch steaks (400g)
- 2 packs - loin medallions (400g)
- 2 packs - prime burgers (4 burgers) - contain gluten & SO2
- 2 packs - jumbo sausages (8 sausages) - contain gluten
Fillet or Striploin Steaks
A true prime cut, whether you’re using the whole fillet or striploin you can’t go wrong with a simple roast (rare, of course) - but, if you’re feeling adventurous, either cut will sit beautifully in the centre of a venison wellington for an amazing showstopper of a dish.
Super-healthy and of course full of flavour, haunch steaks can be cooked simply as you would a beef steak, but with significantly less calories! Lightly oil both sides, season and sear well on both sides before finishing at a lower temperature to your desired done-ness - we will say we think rare is best, and be sure to rest before serving.
One of the most tender cuts, loin medallions need nothing more than a season and sear before pairing with a simple sauce - this might sound like blasphemy coming from a brewery, but a red wine reduction is a beautiful accompaniment.
Our prime Venison burgers are lightly seasoned with a hint of juniper offering a delicious, rich flavour with a satisfying meaty bite. Top with a slice of extra-mature cheddar for a beautifully punchy flavour combination. Allergens: Contain gluten and SO2.
Extra-meaty venison sausages, made with the house mix of seasoned breadcrumbs, are a healthier option than traditional pork or beef sausages, but definitely don’t compromise on flavour - throw them on the BBQ, fry them off and pile them on a buttery mash with red cabbage and a rich gravy or dice and throw into a delicious stew. Allergens: Contain gluten.
All our products are vacuum packed to seal in the freshness and delivered by overnight courier to your door in insulated boxes. And all items are suitable for freezing.
